Ingredients
  

Salmon

  • 4 fillets salmon about 6 oz each

Crust Mixture

  • 1 cup hazelnuts finely chopped
  • 1/2 cup panko breadcrumbs
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a food processor, pulse hazelnuts until finely chopped. Mix with panko breadcrumbs, garlic powder, salt, and pepper.
  • Brush each salmon fillet with Dijon mustard and press the hazelnut mixture onto the top.
  • Drizzle with olive oil and place on the prepared baking sheet.
  • Bake for 12-15 minutes, or until salmon flakes easily with a fork.

Notes

Serve with a side of roasted vegetables or a fresh salad for a balanced meal.
