Ingredients

  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 400 g green beans trimmed
  • 2 cups diced tomatoes fresh or canned
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp cinnamon optional
  • 1/4 cup water

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the trimmed green beans and stir to coat them in the oil.
  • Pour in the diced tomatoes, salt, black pepper, cinnamon (if using), and water. Stir well.
  • Cover the pot and let the mixture simmer on low heat for 30–35 minutes, stirring occasionally, until the beans are tender.
  • Serve warm or at room temperature with pita bread or rice.

Notes

For added flavor, you can sprinkle fresh parsley or a squeeze of lemon juice before serving. This dish tastes even better the next day!
