Instructions
Heat a large pot over medium heat. Add butter to prevent sticking.
Add Italian sausage (remove casings if using links) and break it apart with a spoon.
Cook until browned and slightly crispy, about 5–7 minutes. Drain excess grease if needed.
Add diced onions to the pot and cook until soft (about 3 minutes).
Stir in minced garlic and red pepper flakes (if using), cooking for another 30 seconds until fragrant.
Pour in chicken broth, scraping the bottom of the pot to release browned bits.
Bring to a gentle simmer and let it cook for 10 minutes, allowing flavors to meld.
Lower the heat and slowly pour in heavy cream, stirring constantly.
Add freshly grated Parmesan cheese, stirring until it melts smoothly into the broth.
Stir in chopped spinach or kale, letting it wilt for 1–2 minutes.
Taste and adjust seasoning with salt & black pepper as needed.
Ladle into bowls and garnish with extra Parmesan cheese. Serve with crusty bread or garlic toast! 🍞
Notes
For a thicker soup, mix 1 tbsp flour or cornstarch with a bit of cold water before adding to the broth.
