Main Ingredients

  • 1 lb Italian sausage mild or spicy
  • 1 small onion diced
  • 4 cloves garlic minced
  • 4 cups chicken broth low-sodium
  • 1 cup heavy cream
  • 1 1/2 cups Parmesan cheese freshly grated
  • 1 1/2 cups baby spinach or kale chopped
  • 2 tbsp butter
  • 1/2 tsp red pepper flakes optional for spice
  • Salt & black pepper to taste

Optional Add-Ins

  • 1 tbsp flour or cornstarch slurry for a thicker soup
  • 1/2 cup diced carrots or celery for extra vegetables
  • 1/2 tsp smoked paprika for a smoky depth of flavor

Instructions
 

  • Heat a large pot over medium heat. Add butter to prevent sticking.
  • Add Italian sausage (remove casings if using links) and break it apart with a spoon.
  • Cook until browned and slightly crispy, about 5–7 minutes. Drain excess grease if needed.
  • Add diced onions to the pot and cook until soft (about 3 minutes).
  • Stir in minced garlic and red pepper flakes (if using), cooking for another 30 seconds until fragrant.
  • Pour in chicken broth, scraping the bottom of the pot to release browned bits.
  • Bring to a gentle simmer and let it cook for 10 minutes, allowing flavors to meld.
  • Lower the heat and slowly pour in heavy cream, stirring constantly.
  • Add freshly grated Parmesan cheese, stirring until it melts smoothly into the broth.
  • Stir in chopped spinach or kale, letting it wilt for 1–2 minutes.
  • Taste and adjust seasoning with salt & black pepper as needed.
  • Ladle into bowls and garnish with extra Parmesan cheese. Serve with crusty bread or garlic toast! 🍞

Notes

For a thicker soup, mix 1 tbsp flour or cornstarch with a bit of cold water before adding to the broth.
