  • 2 cups Chihuahua cheese shredded
  • 1/2 lb Mexican chorizo casing removed
  • 1/4 cup white onion diced
  • 1 clove garlic minced
  • 1 tbsp jalapeño finely chopped
  • fresh cilantro for garnish
  • corn tortillas for serving

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In an oven-safe skillet, cook the chorizo over medium heat until browned, about 5 minutes. Remove excess grease if needed.
  • Add the diced onion, garlic, and jalapeño. Sauté for another 3 minutes until softened.
  • Spread the shredded Chihuahua cheese evenly over the chorizo mixture.
  • Transfer the skillet to the oven and bake for 10 minutes, or until the cheese is fully melted and bubbly.
  • Remove from the oven and garnish with fresh cilantro. Serve hot with warm corn tortillas.

Notes

For a smokier flavor, try using a mix of Chihuahua and Oaxaca cheese. You can also add poblano peppers for extra depth.
