Instructions
Preheat the oven to 375°F (190°C).
In an oven-safe skillet, cook the chorizo over medium heat until browned, about 5 minutes. Remove excess grease if needed.
Add the diced onion, garlic, and jalapeño. Sauté for another 3 minutes until softened.
Spread the shredded Chihuahua cheese evenly over the chorizo mixture.
Transfer the skillet to the oven and bake for 10 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven and garnish with fresh cilantro. Serve hot with warm corn tortillas.
Notes
For a smokier flavor, try using a mix of Chihuahua and Oaxaca cheese. You can also add poblano peppers for extra depth.
